Develop Advanced Production Judgment

Advanced Cider & Perry Production is the culminating course in the Cider Institute curriculum. It is designed for experienced cidermakers who want to deepen their technical knowledge, strengthen their production decision-making, and better understand how the full cider production system works together.

Through research-based lectures, laboratory exercises, sensory evaluation, hands-on production activities, and collaborative group work, participants examine how chemistry, microbiology, raw materials, process controls, equipment, and finishing decisions influence the final product.

Rather than following a prescribed recipe, participants learn to evaluate tradeoffs, predict outcomes, and make evidence-based production decisions aligned with defined style and quality goals.

Applied Learning

Learn to Make and Defend Production Decisions

Throughout the week, participants work in teams to plan and create a cider within a simulated production environment.

At each stage, groups evaluate the available information, make production decisions, and justify those choices based on science, sensory goals, and practical constraints.

Five-Day Course Agenda

Inside the Training

Day 1: Juice

Apple and pear composition, juice chemistry and adjustments, raw material selection, handling, processing equipment, waste streams, by-products, industry standards, and practical production decision-making.

Day 2: Fermentation

Fermentation design, yeast and nutrient management, microbiology, spoilage control, fermentation biochemistry, environmental controls, monitoring, problem prevention, scale considerations, and equipment.

Day 3: Fermentation Systems

Chemical and microbial interactions, malolactic fermentation, facility design, production systems, cider styles, market positioning, clarification, and stabilization.

Day 4: Finishing

Blending, additions, product balance, style development, stabilization strategies, and legal and practical production considerations.

Day 5: Packaging & Product Evaluation

Packaging formats, maturation, storage, final product evaluation, linking production decisions to product expression, and group project presentations.

Prerequisite

Foundation-Level Knowledge Required

Successful completion of the Cider & Perry Production – Foundation course is required.

Applicants with significant professional experience may be admitted on a case-by-case basis.

Registration Terms

Cancellation Policy

Before October 1, 2026

Cancellations will be refunded 100%, minus service fees.

October 1–31, 2026

Cancellations will be refunded 50%, minus service fees.

On or After November 1, 2026

Registrations are non-refundable. Substitutes from the same organization are welcome.

If the class is canceled or interrupted for any reason, the Cider Institute will not be responsible for refunding airfare or accommodation expenses. Other course-related costs will be reimbursed in proportion to the canceled activities, minus a fair administrative cost.
